Spring 2020 - I loved this class. We had a group project which looked over food insecurity in low income communities and communities of color throughout the course of the quarter. Each group had to come up with a proposal to mitigate the effects of socioeconomic status and environmental indications with a lens on food. The policy brief was supposed to be a minimum of 5000 words but before getting to this point the group had to present once in week 5 for midterms and again in week 9. Even though the format was intended for in-person instruction, the class was still worthwhile on zoom. Along with the project, there were discussion reading responses. There were readings for 7 weeks and we only had to submit 5 responses out of 7. Nicole was super helpful and accommodating throughout this quarter.
